Recipe: Açai & Blueberry Pancakes

Say it with me…AH-SIGH-EEE…Açai!

Pancake day is FOUR days away and I have been experimenting in the kitchen with different flavours and toppings to accompany my favourite fluffy treat. If you’re a fan of the maple-stuff, it’s no real secret that most syrups FULL of refined sugar! If you still fancy a gorgeously sweet and thick topping to your pancakes, this is the recipe for you (and just in time for Pancake Day!)

If you’re like me and spend a lot of time trolling the internet/Pinterest looking for food inspiration, it is most likely that you have seen açai featured in either elaborate looking bowls or whipped into delicious smoothies. We are somewhat behind the times when it comes to açai. It is a daily staple in diets across the United States, Asia and Australia. I have been introduced to the company Sambazon who is the world’s leading producer of Açaí in all of the best ways!

Sambazon is the only certified organic and fair trade Açaí brand in the UK. Their supply chain allows the opportunity gives back to the rainforest at every stage of the process and produce their product with sustainability as their main goal.


In this recipe, we are going to be using the Sambazon Original Blend Superfood Packs. The pack features four individual 400g packets of mixed berry, frozen Açai complete with just a hint of cacao. We’ll be warming this Açai through to make the gorgeous, warming accompaniment for our fluffy pancakes. For dietary requirement folk, these packets are organic, vegan, kosher, gluten-free and lactose-free! yay!


150g of self-raising flour

1 tsp of baking powder

1/2 tsp of salt

2 tbsp of caster sugar

150ml of milk (I used almond in this particular recipe but feel free to milk it up any way you please!)

1 large egg (Whisk this sucker up!)

2 tbsp of Olive Oil



Method (Pancakes): 

  1. Sift your flour, baking powder, salt and caster sugar into a large bowl. Separately whisk your milk and egg and last of all the oil.

  2. Take your liquid mixture and begin to pour slowly into the flour mixture, whisking as you go to avoid the formation of any pesky lumps.  fork, beat until you have a smooth batter.

  3. Pop a pan on the hob and heat to medium heat. Spray some oil to ensure your batter doesn’t stick.  When the oil has melted get a ladle or spoonful of your batter and pour into a wee circle on your pan. It should be THICK (with two C’s, just how we like it!). Give it a little while and flip to ensure both sides are beautiful and golden fluffy goodness.

  4. Keep going until all your batter is gone!


Method (Sambazon Açai Sauce):

  1. In a saucepan, add a decent handful of plump and juicy Blueberries and your Sambazon Original Superfruit. Warm through on medium heat until it shows wee bubbles.
  2. Take a little dash of cinnamon and a small drizzle of honey to the mixture.
  3. Stir often until you have a thick syrup that you can draw your spoon through and see the bottom of the pan.
  4. Take your pan and lather this ALL OVER your stack of fluffy pancakes.
  5. Pop a couple of berries around the outside!


Et voila! There you have it!

Now all that is left to do is go and enjoy your delicious pancakes with a cup of coffee.
