Want to have some comforting food that is gluten free and dairy free? I have the perfect recipe for you!
I absolutely adore fish in any form, but had always found the idea of a Fish Pie a little daunting. I have seen recipes which include using a lot milk or full cream cheese and that is just not how I roll.
After doing a bit of research and using what I had in my cupboards, I came up with the following recipe which creates a light, dairy free version of this classic.
The following recipe is:
Gluten Free (by using Gluten free Cornflower)
Dairy-Free (due to the choice of milk!)
CAN be nut and soya-free (again depending on the choice of milk!)
Preparation Time: 30 minutes
Cooking Time: 30 minutes
(Served 3 big portion or 4 smaller portions)
What do I need?
4-5 medium (Mashable) potatoes peeled and diced
Vegetables of your choice! (I used a frozen bag of carrots, peas and sweetcorn!)
1 tbsp of gluten-free Cornflower
1/2 a pin of dairy free milk (of your choice!)
a Seafood selection or your favourite fish!
Lemon, Salt & Pepper
What to do?
- Take your peeled, washed and diced potatoes and pop them in a pan of boiling water. Have the potatoes cook until soft. Drain, add a knob of your favourite dairy-free butter and leave to one side with the lid on (this will help them go light and fluffy when mashing!)
- Whilst your potatoes are cooking away, pop your frozen veg into a pan and sweat them out! Once they are cooked through, pop them in a bowl and place to the side.
- Take 100ml of your dairy-free milk and pour in the warm pan. Whilst this heats up take one tablespoon of your gluten-free cornflour and add to the milk. Use a whisk to make a thick emulsion.
- Add the remaining milk and simmer over a medium heat and continue to whisk your lovely, creamy sauce. Use this opportunity to add in a teaspoon of Salmon Paste for an ultimate seafood taste!
- Finally, add the fish and the vegetables your cooked earlier all back into your fish sauce in the pan and combine the mixture. Once everything looks covered, pour the mixture back into the oven proof dish.
- Remove the lid from your potatoes, add a splash of your dairy-free milk and mash to your hearts content until you get fluffy, creamy mashed potatoes. Add your salt and pepper here too!
- Ladle the mash gently over the fish mixture, combing it into lines with a fork.
- Pop this in the over at 200 degrees/180 degrees fan/ Gas Mark 3 for 20-30 minutes or until your potatoes go a beautiful, crunchy, golden brown.
- Serve and enjoy on its own (which is what I do!) or serve with broccoli or spinach!
